Cachapa con Queso Guayanés

Cachapas are probably my favourite Venezuelan dish. They look a bit like pancakes, but they are made from fresh corn dough and they are also moister and fluffier with a bit of lumps from the corn kernels. Inside, they usually have cheese; the typical one is called Queso de Mano, a soft white cheese similar to mozzarella. However, sometimes cachapas are filled with other types of cheeses like Guayanés, similar to Queso de Mano but a bit saltier.
